Hey Everyone! a few days ago I added a photo of a tropical fruit smoothie bowl to my Instagram, something I threw together from purchases at my trip to the Thai farmers market. Now I’ve finally gotten around to the recipe! The high cost of tropical fruit in the west is something we consider a “treat” because of paying a premium for it. But here, there’s mango trees on every damn corner.
With that sort of abundance, the cost is incredibly low, and one can get pounds and pounds of fresh tropical fruit for under 5 US dollars. I decided to create a smoothie bowl with my loot because they seem to be all the rage these days and frankly, it’s something I’ve never tried before. I have to be completely honest with you here. I miss my Vitamix. BADLY. When I decided to spend 7 weeks in Thailand, I actually considered bringing it with me (a crazy notion, I know). I settled on just buying a totally standard blender from the TESCO here (the UK version of WALMART) and I’m adamant that I have absolutely no idea how I ever lived without one. I managed this time without my beloved, but I can only imagine how much better it would be with a true blue Vitamix.
This recipe is as island as they com mon! One love! (Clearly, I have Jamaica and Thailand mixed up, whoops).
Tropical Anti-inflammitory Smoothie Bowl ( makes 1 serving)
- 2 fresh organic mangos peeled and cubed
- 1 inch fresh tumeric peeled and minced ( or if you have a Vitamix, just throw that sucker in peel and all)
- a few cubes of ice
Puree the mango and turmeric and ice until silky smooth, transfer into a bowl and then chill in the freezer. continue with other ingredients.
- 1 white dragon fruit
- 1 pink dragon fruit
- bananas
- 2 tbsp chopped cashews
- 2 tbsp dried, raw coconut
- 1 tbsp black sesame seeds or Chia seeds
Chop and arrange fruits, seeds and nuts to your liking. Add tropical flowers to make it extra purttty!
